Beef & Tomato Macaroni Soup

Ingredients

  • 1 lb Ground Beef
  • 1 tablespoon Olive Oil
  • 1 Medium Yellow Onion
  • 2 cloves Garlic
  • 1 (28 oz) can Diced Tomatoes
  • 4 cups Beef Broth
  • 1 teaspoon Dried Oregano
  • ¾ teaspoon Sea Salt
  • ½ teaspoon Black Pepper
  • 1 cup Uncooked Macaroni Pasta
  • 1 cup Diced Carrots
  • 1 cup Frozen Peas

Instructions

  1. Brown beef in oil, drain excess grease.
  2. Sauté onion and garlic in the same pot.
  3. Add tomatoes, beef broth, oregano, salt, and pepper. Simmer.
  4. Add macaroni and carrots. Simmer until tender.
  5. Stir in peas during the last 5 minutes of cooking.
  6. Serve hot.

Notes

Use Italian sausage for spice, add beans and vegetables for a vegetarian option, or stir in cheese for a cheesy variation. Make ahead of time for convenience.
