- 1 lb Ground Beef
- 1 tablespoon Olive Oil
- 1 Medium Yellow Onion
- 2 cloves Garlic
- 1 (28 oz) can Diced Tomatoes
- 4 cups Beef Broth
- 1 teaspoon Dried Oregano
- ¾ teaspoon Sea Salt
- ½ teaspoon Black Pepper
- 1 cup Uncooked Macaroni Pasta
- 1 cup Diced Carrots
- 1 cup Frozen Peas
Instructions
- Brown beef in oil, drain excess grease.
- Sauté onion and garlic in the same pot.
- Add tomatoes, beef broth, oregano, salt, and pepper. Simmer.
- Add macaroni and carrots. Simmer until tender.
- Stir in peas during the last 5 minutes of cooking.
- Serve hot.
Notes
Use Italian sausage for spice, add beans and vegetables for a vegetarian option, or stir in cheese for a cheesy variation. Make ahead of time for convenience.
