  • ½ cup plain or panko breadcrumbs

  • ¼ cup finely diced celery
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup buffalo wing sauce (mild, medium, or hot)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Worcestershire sauce (halal certified, optional)
  • ½ teaspoon garlic powder
  • Optional: Blue cheese or ranch dressing, celery and carrot sticks, fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, onion, celery, egg, garlic, parsley, salt, and black pepper. Mix gently until just combined.
  3. Roll the mixture into 1.5-inch meatballs (about 24) and place on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until meatballs reach an internal temperature of 165°F (74°C).
  5. Meanwhile, in a saucepan over low heat, whisk together buffalo sauce, melted butter, Worcestershire sauce (if using), and garlic powder. Heat until warmed through.
  6. Once meatballs are baked, transfer them to the saucepan and toss gently to coat evenly in the buffalo sauce.
  7. Serve immediately with blue cheese or ranch dressing, celery and carrot sticks, and garnish with fresh parsley if desired. Enjoy!

Notes

For extra heat, use hot buffalo sauce and a pinch of cayenne. For a milder version, use mild buffalo sauce and omit red pepper flakes. Meatballs can be made ahead and reheated before serving.
