- 1 lb ground chicken (halal certified)
- ½ cup plain or panko breadcrumbs
- ¼ cup finely diced yellow onion
- ¼ cup finely diced celery
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1 teaspoon dried parsley
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup buffalo wing sauce (mild, medium, or hot)
- 2 tablespoons unsalted butter, melted
- 1 tablespoon Worcestershire sauce (halal certified, optional)
- ½ teaspoon garlic powder
- Optional: Blue cheese or ranch dressing, celery and carrot sticks, fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, onion, celery, egg, garlic, parsley, salt, and black pepper. Mix gently until just combined.
- Roll the mixture into 1.5-inch meatballs (about 24) and place on the prepared baking sheet.
- Bake for 20-25 minutes, or until meatballs reach an internal temperature of 165°F (74°C).
- Meanwhile, in a saucepan over low heat, whisk together buffalo sauce, melted butter, Worcestershire sauce (if using), and garlic powder. Heat until warmed through.
- Once meatballs are baked, transfer them to the saucepan and toss gently to coat evenly in the buffalo sauce.
- Serve immediately with blue cheese or ranch dressing, celery and carrot sticks, and garnish with fresh parsley if desired. Enjoy!
Notes
For extra heat, use hot buffalo sauce and a pinch of cayenne. For a milder version, use mild buffalo sauce and omit red pepper flakes. Meatballs can be made ahead and reheated before serving.
