For the Casserole:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded or diced
  • 1 large broccoli crown, cut into small florets
  • 1 cup uncooked long-grain rice
  • 2 cans (10.75 oz each) condensed cream of chicken soup
  • 1 cup whole milk or 2%
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup melted unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Crispy Breadcrumb Topping (Optional):

  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked chicken, broccoli, uncooked rice, cream of chicken soup, milk, chicken broth, cheddar cheese, mozzarella cheese, melted butter, garlic powder, onion powder, salt, and black pepper. Stir well to combine.
  3. Pour the mixture into a greased 9×13 inch baking dish, spreading evenly.
  4. If using breadcrumb topping, mix panko breadcrumbs, melted butter, and paprika in a small bowl. Sprinkle evenly over the casserole.
  5. Bake for 30-40 minutes, or until the casserole is bubbly, golden brown on top, and rice is tender.
  6. Let the casserole cool slightly before serving. Serve warm and enjoy!

Notes

For an extra creamy version, stir in ½ cup cream cheese or sour cream before baking. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
