  • Wooden skewers, soaked in water for 30 minutes
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. In a large bowl, whisk together soy sauce, honey, lime juice, vegetable oil, garlic, coriander, cumin, turmeric, and black pepper.
  2. Add chicken strips to the marinade, ensuring full coverage. Refrigerate for at least 30 minutes, or up to 4 hours.
  3. Meanwhile, prepare the peanut sauce. In a saucepan over medium heat, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, rice vinegar, sesame oil, and ginger until smooth and creamy.
  4. Stir in red pepper flakes (if using). Thin with water to desired consistency and keep warm.
  5. Thread marinated chicken onto soaked wooden skewers.
