- 1 cup peanut butter, creamy, unsweetened
- 1 cup coconut milk, full-fat
- ¼ cup soy sauce, low sodium
- ¼ cup honey or brown sugar
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 tablespoon toasted sesame oil
- 1 teaspoon ginger, freshly grated
- ½ teaspoon red pepper flakes (optional)
- ¼ cup water (adjust as needed for consistency)
For Serving and Garnish:
- Wooden skewers, soaked in water for 30 minutes
- Fresh cilantro, chopped
- Lime wedges
Instructions
- In a large bowl, whisk together soy sauce, honey, lime juice, vegetable oil, garlic, coriander, cumin, turmeric, and black pepper.
- Add chicken strips to the marinade, ensuring full coverage. Refrigerate for at least 30 minutes, or up to 4 hours.
- Meanwhile, prepare the peanut sauce. In a saucepan over medium heat, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, rice vinegar, sesame oil, and ginger until smooth and creamy.
- Stir in red pepper flakes (if using). Thin with water to desired consistency and keep warm.
- Thread marinated chicken onto soaked wooden skewers.
- Grill Method: Preheat grill to medium-high and lightly oil grates. Grill skewers for 2-3 minutes per side until cooked through.
- Pan-Frying Method: Heat a skillet over medium-high heat. Cook skewers for 3-4 minutes per side until golden brown.
- Baking Method: Preheat oven to 400°F (200°C). Bake skewers for 15-20 minutes, until fully cooked.
- Serve hot with warm peanut sauce, fresh cilantro, and lime wedges.
Notes
For an extra flavor boost, add finely chopped lemongrass to the marinade. Store peanut sauce in the fridge for up to 3 days. Reheat gently before serving.
