- 2 lbs flank or skirt steak
- 3 chipotle peppers in adobo sauce, plus 2 tbsp adobo sauce
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lime juice
- 3 cloves garlic, minced
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp kosher or sea salt
- 1/2 tsp freshly ground black pepper
Instructions
- In a blender, combine chipotle peppers, adobo sauce, olive oil, lime juice, garlic, vinegar, brown sugar, cumin, oregano, salt, and black pepper. Blend until smooth.
- Place steak in a resealable bag or shallow dish. Pour marinade over the steak, ensuring full coverage. Marinate in the refrigerator for at least 2 hours, preferably 4-8 hours.
- Preheat grill to medium-high heat.
- Remove steak from marinade and discard excess marinade. Pat steak dry with paper towels.
- Grill steak for 3-5 minutes per side for medium-rare, or adjust time to desired doneness.
- Remove from grill and let steak rest for 5-10 minutes before slicing against the grain.
- Garnish with fresh cilantro and lime wedges if desired.
- Serve and enjoy!
Notes
For extra spice, add a minced habanero pepper to the marinade. For enhanced smokiness, include 1 tsp smoked paprika.
