Ingredients

  • 2 Shallots
  • 2 cloves Garlic
  • ½ cup Chicken Broth
  • ½ cup Heavy Cream
  • ¼ cup Dijon Mustard
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Dried Thyme
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Ground White Pepper
  • 2 lbs Russet Potatoes
  • Vegetable Oil (for frying)
  • Sea Salt (for seasoning)
  • Fresh Parsley (optional)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Sear chicken in olive oil until golden brown.
  3. Sauté shallots and garlic in the same skillet.
  4. Add chicken broth, heavy cream, Dijon mustard, thyme, salt, and pepper. Simmer until thickened.
  5. Return chicken to sauce, simmer until cooked through. Stir in lemon juice.
  6. Prepare and fry French fries.
  7. Plate fries, top with chicken, sauce, and parsley garnish.

Notes

Add chili flakes for spicy chicken. Use fresh herbs for extra flavor. Add mushrooms for a richer sauce. Serve with Dijon-Garlic Aioli.
