- 1.5 lbs Boneless, Skinless Chicken Thighs
- 2 tablespoons Olive Oil
- 2 Shallots
- 2 cloves Garlic
- ½ cup Chicken Broth
- ½ cup Heavy Cream
- ¼ cup Dijon Mustard
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Dried Thyme
- ½ teaspoon Sea Salt
- ¼ teaspoon Ground White Pepper
- 2 lbs Russet Potatoes
- Vegetable Oil (for frying)
- Sea Salt (for seasoning)
- Fresh Parsley (optional)
Instructions
- Season chicken thighs with salt and pepper.
- Sear chicken in olive oil until golden brown.
- Sauté shallots and garlic in the same skillet.
- Add chicken broth, heavy cream, Dijon mustard, thyme, salt, and pepper. Simmer until thickened.
- Return chicken to sauce, simmer until cooked through. Stir in lemon juice.
- Prepare and fry French fries.
- Plate fries, top with chicken, sauce, and parsley garnish.
Notes
Add chili flakes for spicy chicken. Use fresh herbs for extra flavor. Add mushrooms for a richer sauce. Serve with Dijon-Garlic Aioli.
