  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs, lightly beaten
  • Vegetable oil, for frying

For the Creamy Mashed Potatoes:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and quartered
  • ½ cup whole milk or 2%
  • 4 tablespoons (½ stick) unsalted butter
  • Salt and black pepper, to taste

For the Tangy and Sweet BBQ Sauce:

  • 1 cup BBQ sauce (store-bought or homemade)

Instructions

  1. In a shallow dish, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.
  2. In another dish, lightly beat the eggs.
  3. Pat chicken dry with paper towels. Dredge each piece in the flour mixture, dip into beaten eggs, then coat again in flour for a double-crispy crust.
  4. Heat vegetable oil in a skillet or Dutch oven to 350°F (175°C). Fry chicken in batches for 12-15 minutes, or until golden brown and crispy.
  5. Transfer fried chicken to a wire rack to drain excess oil.
  6. While chicken is frying, prepare mashed potatoes. Boil potatoes in a large pot until fork-tender, about 15-20 minutes.
  7. Drain and mash potatoes with butter and warm milk until creamy. Season with salt and black pepper to taste.
  8. Brush crispy fried chicken with BBQ sauce or serve sauce on the side.
  9. Serve hot with mashed potatoes and enjoy!
