For the Extra Crispy and Juicy Chicken:
- 1.5 lbs chicken thighs or drumsticks, bone-in, skin-on
- 1 cup all-purpose flour
- ½ cup cornstarch
- 2 teaspoons paprika (sweet or smoked)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs, lightly beaten
- Vegetable oil, for frying
For the Creamy Mashed Potatoes:
- 2 lbs potatoes (Yukon Gold or Russet), peeled and quartered
- ½ cup whole milk or 2%
- 4 tablespoons (½ stick) unsalted butter
- Salt and black pepper, to taste
For the Tangy and Sweet BBQ Sauce:
- 1 cup BBQ sauce (store-bought or homemade)
Instructions
- In a shallow dish, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.
- In another dish, lightly beat the eggs.
- Pat chicken dry with paper towels. Dredge each piece in the flour mixture, dip into beaten eggs, then coat again in flour for a double-crispy crust.
- Heat vegetable oil in a skillet or Dutch oven to 350°F (175°C). Fry chicken in batches for 12-15 minutes, or until golden brown and crispy.
- Transfer fried chicken to a wire rack to drain excess oil.
- While chicken is frying, prepare mashed potatoes. Boil potatoes in a large pot until fork-tender, about 15-20 minutes.
- Drain and mash potatoes with butter and warm milk until creamy. Season with salt and black pepper to taste.
- Brush crispy fried chicken with BBQ sauce or serve sauce on the side.
- Serve hot with mashed potatoes and enjoy!
Notes
For extra crispiness, let the coated chicken rest for 5-10 minutes before frying. Store leftovers separately and reheat in an oven for the best texture.
