For the Chicken Meatloaf:
- 2 lbs lean ground chicken
- 1 cup plain, dried breadcrumbs
- ½ cup Parmesan cheese, grated (plus extra for topping)
- ½ cup whole milk or 2%
- 1 large egg, lightly beaten
- 4 cloves garlic, minced
- ¼ cup fresh parsley, chopped
- 1 teaspoon dried oregano
- ½ teaspoon kosher salt (adjust to taste)
- ½ teaspoon black pepper, freshly ground
Optional Garlic Parmesan Glaze:
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- ¼ cup Parmesan cheese, grated
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×5 inch loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic, parsley, oregano, salt, and pepper.
- Mix gently until just combined. Do not overmix.
- Shape into a loaf and place in the prepared baking dish.
- If using the glaze, mix melted butter, minced garlic, and Parmesan cheese in a small bowl.
- Brush glaze over the top of the meatloaf evenly.
- Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 10-15 minutes before slicing.
- Garnish with extra fresh parsley and serve warm.
Notes
For extra moisture, add 2 tablespoons of sour cream or Greek yogurt to the meatloaf mixture. Serve with mashed potatoes or roasted vegetables for a complete meal!
