- 1.75 lbs Beef Chuck Roast
- 3 tablespoons Avocado Oil
- 2 Large Sweet Onions
- 4 Large Carrots
- 3 stalks Celery
- 5 cloves Garlic
- 2.5 teaspoons Smoked Paprika
- 1.25 teaspoons Dried Oregano
- 1 teaspoon Sea Salt
- ¾ teaspoon Black Pepper
- ½ teaspoon Cumin Powder
- 2.5 lbs Red Potatoes
- 1 (14.5 oz) can Diced Tomatoes with Green Chilies
- 1.25 cups Beef Bone Broth
- ¼ cup Fresh Cilantro
Instructions
- Sear beef in oil until browned.
- Sauté onions, carrots, and celery in the same pot.
- Add garlic, spices, potatoes, and tomatoes.
- Pour in beef bone broth, cover, and bake at 300°F (150°C) for 3-3.5 hours, or until beef is tender.
- Rest, garnish with cilantro, and serve.
Notes
Add cheese topping, green beans, or use ancho chile powder for variations. Serve with crusty bread, salad, or cornbread.
