For the Garlic Butter Chicken Bites:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 6 tablespoons unsalted butter, divided (4 tbsp + 2 tbsp)
- 6 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper, freshly ground
For the Creamy Parmesan Pasta:
- 1 lb fettuccine or linguine
- ½ cup heavy cream
- 1.5 cups freshly grated Parmesan cheese, divided (1 cup + ½ cup)
- ¼ cup reserved pasta water
- Salt and black pepper, to taste
Optional Garnishes:
- Fresh parsley, chopped
- Extra grated Parmesan cheese
Instructions
- Melt 4 tablespoons butter in a large skillet over medium-high heat.
- Add chicken cubes in a single layer, seasoning with salt, black pepper, and Italian seasoning.
- Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
- Remove chicken from skillet and set aside.
- Melt remaining 2 tablespoons butter in the same skillet. Add minced garlic and cook for 1 minute until fragrant.
- Pour garlic butter sauce over cooked chicken and toss to coat. Keep warm.
- Meanwhile, cook pasta according to package directions in a large pot of salted boiling water until al dente.
- Reserve ¼ cup pasta water, then drain pasta and return to the pot.
- Stir in heavy cream and 1 cup grated Parmesan cheese, mixing over low heat until smooth and creamy.
- Add reserved pasta water a little at a time until the sauce reaches desired consistency.
- Season with salt and black pepper to taste.
- Serve pasta topped with garlic butter chicken bites. Garnish with parsley and extra Parmesan cheese, if desired.
Notes
For a spicier kick, add red pepper flakes to the garlic butter sauce. Store leftovers in separate airtight containers in the fridge for up to 3 days. Reheat pasta with a splash of cream for best results.
