  • 6 tablespoons unsalted butter, divided (4 tbsp + 2 tbsp)
  • 6 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper, freshly ground

For the Creamy Parmesan Pasta:

  • 1 lb fettuccine or linguine
  • ½ cup heavy cream
  • 1.5 cups freshly grated Parmesan cheese, divided (1 cup + ½ cup)
  • ¼ cup reserved pasta water
  • Salt and black pepper, to taste

Optional Garnishes:

  • Fresh parsley, chopped
  • Extra grated Parmesan cheese

Instructions

  1. Melt 4 tablespoons butter in a large skillet over medium-high heat.
  2. Add chicken cubes in a single layer, seasoning with salt, black pepper, and Italian seasoning.
  3. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  4. Remove chicken from skillet and set aside.
  5. Melt remaining 2 tablespoons butter in the same skillet. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour garlic butter sauce over cooked chicken and toss to coat. Keep warm.
  7. Meanwhile, cook pasta according to package directions in a large pot of salted boiling water until al dente.
  8. Reserve ¼ cup pasta water, then drain pasta and return to the pot.
  9. Stir in heavy cream and 1 cup grated Parmesan cheese, mixing over low heat until smooth and creamy.
  10. Add reserved pasta water a little at a time until the sauce reaches desired consistency.
  11. Season with salt and black pepper to taste.
  12. Serve pasta topped with garlic butter chicken bites. Garnish with parsley and extra Parmesan cheese, if desired.

Notes

For a spicier kick, add red pepper flakes to the garlic butter sauce. Store leftovers in separate airtight containers in the fridge for up to 3 days. Reheat pasta with a splash of cream for best results.
