- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 1 (28 ounce) can crushed tomatoes
- 4 cups beef broth
- 1 (15 ounce) can tomato sauce
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add ground beef and onion, cooking until beef is browned and onion is softened, about 5-7 minutes.
- Drain excess grease, then stir in garlic, Italian seasoning, oregano, salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in crushed tomatoes, tomato sauce, and beef broth. Bring to a simmer.
- Add broken lasagna noodles and simmer for 15-20 minutes, stirring occasionally, until noodles are tender.
- Remove from heat and stir in ricotta cheese.
- Ladle soup into bowls and top with shredded mozzarella and grated Parmesan.
- Garnish with fresh basil leaves if desired.
- Serve immediately and enjoy!
Notes
For extra flavor, swap ground beef with Italian sausage or add vegetables like mushrooms or zucchini. Adjust broth amount to achieve desired soup thickness. Store leftovers in an airtight container in the fridge for up to 4 days.
