For the Chicken:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil, extra virgin
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt (adjust to taste)
- ½ teaspoon black pepper, freshly ground
For the Rice:
- 1 large yellow or white onion, finely diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2.5 cups low-sodium chicken broth
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken cubes in a single layer and season with Italian seasoning, garlic powder, salt, and pepper.
- Sear for 2-3 minutes per side until golden brown, then remove from skillet.
- In the same skillet, sauté diced onion for 3-5 minutes until soft.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in uncooked rice and toast for 1 minute.
- Pour in chicken broth, bring to a boil, then cover and simmer for 18-20 minutes until rice is cooked.
- Remove from heat and stir in heavy cream and Parmesan cheese.
- Return seared chicken to the skillet and mix gently.
- Garnish with fresh parsley and serve hot.
Notes
For extra flavour, add frozen peas, broccoli, or mushrooms to the rice while it cooks. Serve with a fresh green salad or garlic bread for a complete meal!
