For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons olive oil, extra virgin
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt (adjust to taste)
  • ½ teaspoon black pepper, freshly ground

For the Rice:

  • 1 large yellow or white onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2.5 cups low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken cubes in a single layer and season with Italian seasoning, garlic powder, salt, and pepper.
  3. Sear for 2-3 minutes per side until golden brown, then remove from skillet.
  4. In the same skillet, sauté diced onion for 3-5 minutes until soft.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Stir in uncooked rice and toast for 1 minute.
  7. Pour in chicken broth, bring to a boil, then cover and simmer for 18-20 minutes until rice is cooked.
  8. Remove from heat and stir in heavy cream and Parmesan cheese.
  9. Return seared chicken to the skillet and mix gently.
  10. Garnish with fresh parsley and serve hot.

Notes

For extra flavour, add frozen peas, broccoli, or mushrooms to the rice while it cooks. Serve with a fresh green salad or garlic bread for a complete meal!
