For the Zesty Orange Cupcakes:
- 2 ½ cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup (1 stick) unsalted butter, softened
- 2 large fresh eggs
- ½ cup vegetable oil
- ½ cup buttermilk
- ½ cup fresh orange juice
- 2 tbsp orange zest
- 1 tsp pure vanilla extract
For the Luscious Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 3 cups powdered sugar
- 2 tbsp fresh orange juice
- 1 tsp pure vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together sugar and butter until light and fluffy.
- Beat in eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together vegetable oil, buttermilk, orange juice, orange zest, and vanilla extract.
- Gradually add the wet ingredients to the butter mixture, alternating with the dry ingredients, mixing until just combined.
- Divide the batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool completely before frosting.
- For the frosting, beat together cream cheese and butter until smooth.
- Gradually add powdered sugar, mixing until light and fluffy.
- Beat in orange juice and vanilla extract.
- Frost cupcakes and decorate with additional orange zest, if desired.
Notes
For a different twist, try using blood oranges for a unique flavour and vibrant colour. Store cupcakes in an airtight container for up to 3 days.
