For the Zesty Orange Cupcakes:

  • 2 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup (1 stick) unsalted butter, softened
  • 2 large fresh eggs
  • ½ cup vegetable oil
  • ½ cup buttermilk
  • ½ cup fresh orange juice
  • 2 tbsp orange zest
  • 1 tsp pure vanilla extract

For the Luscious Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tbsp fresh orange juice
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together sugar and butter until light and fluffy.
  4. Beat in eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together vegetable oil, buttermilk, orange juice, orange zest, and vanilla extract.
  6. Gradually add the wet ingredients to the butter mixture, alternating with the dry ingredients, mixing until just combined.
  7. Divide the batter evenly among cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cupcakes cool completely before frosting.
  10. For the frosting, beat together cream cheese and butter until smooth.
  11. Gradually add powdered sugar, mixing until light and fluffy.
  12. Beat in orange juice and vanilla extract.
  13. Frost cupcakes and decorate with additional orange zest, if desired.

Notes

For a different twist, try using blood oranges for a unique flavour and vibrant colour. Store cupcakes in an airtight container for up to 3 days.
