For the Luscious Red Velvet Cake:
- 1 box red velvet cake mix (15.25 oz)
- 1 ¼ cups water
- ⅓ cup vegetable oil
- 3 large fresh eggs
For the Smooth and Sweet Coating:
- 1 package (12 oz) white candy melts or white chocolate chips
- 2 tbsp vegetable shortening or coconut oil (optional, for thinning)
- Red food coloring gel (optional)
For Decoration and Assembly:
- Cake pop sticks (4-inch or 6-inch)
- Sprinkles, edible glitter, or chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, mix red velvet cake mix, water, vegetable oil, and eggs. Beat until smooth.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the cake completely, then crumble it into fine crumbs in a large bowl.
- Using your hands, knead the cake crumbs until they form a dough-like consistency. If needed, add a small amount of frosting to help bind.
- Roll the mixture into 1 ½-inch balls and place on a parchment-lined baking sheet. Chill for 30 minutes in the refrigerator or 15 minutes in the freezer.
- While the cake balls chill, melt white candy melts or white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. If too thick, add shortening or coconut oil.
- Dip the tip of each cake pop stick into melted chocolate and insert halfway into a chilled cake ball.
- Dip each cake pop into the melted coating, swirling to coat evenly. Tap off excess coating.
- Immediately decorate with sprinkles or edible glitter before the coating hardens.
- Place cake pops upright in a styrofoam block or cake pop stand to set completely.
Notes
For extra flavor, drizzle with dark chocolate or add a pinch of espresso powder to the cake mix. Store cake pops in an airtight container for up to a week.
