For the Luscious Red Velvet Cake:

  • 1 box red velvet cake mix (15.25 oz)
  • 1 ¼ cups water
  • ⅓ cup vegetable oil
  • 3 large fresh eggs

For the Smooth and Sweet Coating:

  • 1 package (12 oz) white candy melts or white chocolate chips
  • 2 tbsp vegetable shortening or coconut oil (optional, for thinning)
  • Red food coloring gel (optional)

For Decoration and Assembly:

  • Cake pop sticks (4-inch or 6-inch)
  • Sprinkles, edible glitter, or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mix red velvet cake mix, water, vegetable oil, and eggs. Beat until smooth.
  3. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  4. Cool the cake completely, then crumble it into fine crumbs in a large bowl.
  5. Using your hands, knead the cake crumbs until they form a dough-like consistency. If needed, add a small amount of frosting to help bind.
  6. Roll the mixture into 1 ½-inch balls and place on a parchment-lined baking sheet. Chill for 30 minutes in the refrigerator or 15 minutes in the freezer.
  7. While the cake balls chill, melt white candy melts or white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. If too thick, add shortening or coconut oil.
  8. Dip the tip of each cake pop stick into melted chocolate and insert halfway into a chilled cake ball.
  9. Dip each cake pop into the melted coating, swirling to coat evenly. Tap off excess coating.
  10. Immediately decorate with sprinkles or edible glitter before the coating hardens.
  11. Place cake pops upright in a styrofoam block or cake pop stand to set completely.

Notes

For extra flavor, drizzle with dark chocolate or add a pinch of espresso powder to the cake mix. Store cake pops in an airtight container for up to a week.
