  • 1 cup buttermilk

  • 1 tsp red food coloring gel
  • 1 tsp white vinegar

For the Dreamy Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream sugar and softened butter until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract, cocoa powder, red food coloring, and white vinegar.
  5. Alternately mix in buttermilk and dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  6. Drop rounded tablespoons of batter onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes, or until centers spring back when lightly touched. Cool on wire racks.
  8. For the filling, beat softened cream cheese and butter until smooth. Gradually mix in powdered sugar, then add vanilla extract.
  9. Pair up similar-sized cake rounds. Pipe or spread cream cheese filling onto one, then top with another to create a whoopie pie.
  10. Chill for 30 minutes before serving for best texture.

Notes

For extra flavor, add a teaspoon of espresso powder to the batter or cinnamon to the filling. Store in an airtight container in the refrigerator for up to 3 days.
