  • 1 (8 oz) package cream cheese, softened
  • ½ cup whole milk
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ tsp caraway seeds (optional)
  • 2 cups shredded Swiss cheese, divided

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, mix cubed rye bread, corned beef, and drained sauerkraut. Spread evenly in the baking dish.
  3. In another bowl, whisk together cream cheese, Thousand Island dressing, milk, Dijon mustard, Worcestershire sauce, and caraway seeds (if using) until smooth.
  4. Pour the creamy sauce over the bread and meat mixture, ensuring even coverage.
  5. Sprinkle 1 ½ cups of shredded Swiss cheese evenly over the casserole.
  6. Bake for 30-35 minutes, until heated through and bubbly.
  7. Sprinkle the remaining ½ cup of Swiss cheese on top and bake for another 5-10 minutes until golden brown.
  8. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For extra crunch, top with buttered breadcrumbs or crushed rye crackers. Swap corned beef for pastrami for a smokier flavor. Store leftovers in an airtight container and reheat in the oven for best results.
