Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, mix cubed rye bread, corned beef, and drained sauerkraut. Spread evenly in the baking dish.
- In another bowl, whisk together cream cheese, Thousand Island dressing, milk, Dijon mustard, Worcestershire sauce, and caraway seeds (if using) until smooth.
- Pour the creamy sauce over the bread and meat mixture, ensuring even coverage.
- Sprinkle 1 ½ cups of shredded Swiss cheese evenly over the casserole.
- Bake for 30-35 minutes, until heated through and bubbly.
- Sprinkle the remaining ½ cup of Swiss cheese on top and bake for another 5-10 minutes until golden brown.
- Let the casserole rest for 5-10 minutes before slicing and serving.
Notes
For extra crunch, top with buttered breadcrumbs or crushed rye crackers. Swap corned beef for pastrami for a smokier flavor. Store leftovers in an airtight container and reheat in the oven for best results.
