  • 24 ounces semi-sweet, dark, or milk chocolate chips
  • 2 tablespoons unsalted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • Pinch of kosher salt
  • 2 cups mini marshmallows
  • 2 cups roughly chopped walnuts, almonds, or pecans (roasted or raw)
  • Optional: ½ cup dried fruit (raisins, cranberries, or apricots)
  • Optional: ½ cup chopped chocolate chunks (semi-sweet or dark)

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
  2. In a large microwave-safe bowl, combine chocolate chips, sweetened condensed milk, and butter (or coconut oil). Microwave in 30-second intervals, stirring after each, until melted and smooth.
  3. Stir in vanilla extract and salt.
  4. Gently fold in mini marshmallows, nuts, and optional mix-ins (dried fruit or chocolate chunks).
  5. Pour the fudge mixture into the prepared baking dish, spreading evenly. Press down gently for an even surface.
  6. Cover and refrigerate for at least 2 hours, or until firm.
  7. Once set, lift the fudge out using parchment paper overhang and cut into squares.
  8. Serve chilled or at room temperature. Enjoy!

Notes

For extra richness, use dark chocolate. To make a nut-free version, simply omit the nuts and add more marshmallows or dried fruit. Store fudge in an airtight container at room temperature for up to 2 weeks, or refrigerate for up to 4 weeks.
