- 2 lbs Beef Chuck Roast
- 1 large Yellow Onion
- 3 cloves Garlic
- 1 inch Ginger
- 1 (14 oz) can Diced Tomatoes
- 2 tablespoons Curry Powder
- 1 teaspoon Ground Cumin
- ½ teaspoon Ground Turmeric
- ¼ teaspoon Red Pepper Flakes (optional)
- 1 (13.5 oz) can Full-Fat Coconut Milk
- 1 tablespoon Soy Sauce
- 1 tablespoon Fresh Lime Juice
- Sea Salt and Black Pepper, to taste
- Fresh Cilantro (optional)
Instructions
- Sear beef in a skillet until browned on all sides.
- Sauté onion, garlic, and ginger in the same skillet.
- Combine seared beef, sautéed vegetables, tomatoes, spices, coconut milk, soy sauce, salt, and pepper in a slow cooker.
- Cook on low for 8-10 hours, or on high for 4-5 hours, or until beef is tender.
- Stir in lime juice, garnish with cilantro, and serve.
Notes
Add vegetables for variety. Adjust spice level with different chili powder or fresh chili. Enhance creaminess with extra coconut cream. Serve with couscous, quinoa, flatbreads, or polenta.
