For the “Hero Crust” Topping:

  • ½ cup panko breadcrumbs

  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion for 5-7 minutes until softened.
  2. Add minced garlic and cook for another minute.
  3. Pour chicken broth into the slow cooker and add the sautéed onions and garlic.
  4. Stir in dried thyme, dried rosemary, salt, and black pepper.
  5. Place chicken breasts in the slow cooker, ensuring they are mostly submerged in the broth.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  7. While the chicken is cooking, prepare the ‘hero crust’ topping by mixing panko, Parmesan, olive oil, minced garlic, oregano, and basil in a bowl.
  8. Once chicken is cooked, transfer it to a baking sheet.
  9. Spoon the breadcrumb mixture over each chicken breast and press lightly to adhere.
  10. Broil for 2-3 minutes until golden brown and crispy, watching closely to avoid burning.
