For the Slow Cooker Chicken:
- 4 boneless, skinless chicken breasts (6–8 ounces each)
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon salt
- ½ teaspoon black pepper
For the “Hero Crust” Topping:
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 clove garlic, minced
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion for 5-7 minutes until softened.
- Add minced garlic and cook for another minute.
- Pour chicken broth into the slow cooker and add the sautéed onions and garlic.
- Stir in dried thyme, dried rosemary, salt, and black pepper.
- Place chicken breasts in the slow cooker, ensuring they are mostly submerged in the broth.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- While the chicken is cooking, prepare the ‘hero crust’ topping by mixing panko, Parmesan, olive oil, minced garlic, oregano, and basil in a bowl.
- Once chicken is cooked, transfer it to a baking sheet.
- Spoon the breadcrumb mixture over each chicken breast and press lightly to adhere.
- Broil for 2-3 minutes until golden brown and crispy, watching closely to avoid burning.
- Serve immediately and enjoy!
Notes
For extra flavor, add lemon zest to the hero crust topping. Store leftovers in an airtight container and reheat in an oven for best results.
