- 1.5 lbs sausage (beef, lamb, or chicken), sliced or whole
- 3 large bell peppers (red, yellow, green), sliced into strips
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce

- 1 tbsp dried oregano
- 1 tsp dried basil
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)

- Fresh parsley, chopped (for garnish)

Instructions
- Slice the bell peppers into strips, slice the onion, and mince the garlic.
- In a 6-quart or larger slow cooker, combine the sausage, peppers, onion, garlic, crushed tomatoes, tomato sauce, oregano, basil, salt, black pepper, and red pepper flakes.
- Stir well to ensure even distribution of ingredients.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the sausage is cooked through and the peppers are tender.
- Give the mixture a final stir before serving.
- Garnish with fresh parsley and serve with grated Parmesan cheese, if desired.
Notes
For a spicier kick, use hot sausage or add extra red pepper flakes. Serve over pasta, rice, polenta, or in hoagie rolls for a delicious sandwich.
