- 1 can (15 oz) Corn
- 1 Jalapeño Pepper (optional)
- 1 packet (1 oz) Southwest Seasoning
- 1 teaspoon Chili Powder
- ½ teaspoon Sea Salt
- ¼ teaspoon Ground Cumin
- 1 cup Cheddar Cheese
- 1 package (12-14 count) Egg Roll Wrappers
- 1 large Egg
- Vegetable Oil (for frying)
- Ranch Dressing (optional)
- Salsa (optional)
- Sour Cream (optional)
Instructions
- Brown ground chicken, drain excess grease.
- Sauté bell pepper and jalapeño (optional) in the same skillet.
- Add black beans, corn, Southwest seasoning, chili powder, salt, and cumin. Cook briefly.
- Stir in cheese until melted. Let cool slightly.
- Spoon filling onto egg roll wrappers and roll tightly. Seal with egg wash.
- Fry or bake egg rolls until golden brown and crispy.
- Serve hot with dipping sauces (optional).
