- 2 medium Ripe Avocados Should yield slightly to gentle pressure.
- 1 cup Fresh Corn About 2 ears of corn, or thawed frozen corn.
- 0.5 cup Cherry Tomatoes Halved for sweetness and color.
- 0.25 cup Red Onion Finely chopped for flavor.
- 2 tablespoons Fresh Cilantro Chopped for freshness.
- 2 tablespoons Lime Juice Juice of one lime to prevent browning.
- 1 pinch Salt To enhance flavors.
Instructions
- Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash gently with a fork, leaving some chunks.
- If using fresh corn, slice the kernels off the cob. Add the corn to the bowl with the mashed avocado.
- Rinse the cherry tomatoes, slice them in half, and add to the mixing bowl.
- Finely chop the red onion and add it to the bowl.
- Chop the fresh cilantro and add it to the bowl.
- Juice the lime and pour the juice over the mixture in the bowl.
- Season with a pinch of salt and gently fold all ingredients together.
- Taste and adjust seasoning as needed. Allow the salsa to sit for at least 15 minutes before serving.
- Serve with tortilla chips or as a topping for grilled dishes.
Notes
For a spicy kick, add diced jalapeños. For a tropical twist, consider adding diced mango or pineapple.
