  • 2 medium Ripe Avocados Should yield slightly to gentle pressure.
  • 1 cup Fresh Corn About 2 ears of corn, or thawed frozen corn.
  • 0.5 cup Cherry Tomatoes Halved for sweetness and color.
  • 0.25 cup Red Onion Finely chopped for flavor.
  • 2 tablespoons Fresh Cilantro Chopped for freshness.
  • 2 tablespoons Lime Juice Juice of one lime to prevent browning.
  • 1 pinch Salt To enhance flavors.

Instructions
 

  • Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash gently with a fork, leaving some chunks.
  • If using fresh corn, slice the kernels off the cob. Add the corn to the bowl with the mashed avocado.
  • Rinse the cherry tomatoes, slice them in half, and add to the mixing bowl.
  • Finely chop the red onion and add it to the bowl.
  • Chop the fresh cilantro and add it to the bowl.
  • Juice the lime and pour the juice over the mixture in the bowl.
  • Season with a pinch of salt and gently fold all ingredients together.
  • Taste and adjust seasoning as needed. Allow the salsa to sit for at least 15 minutes before serving.
  • Serve with tortilla chips or as a topping for grilled dishes.

Notes

For a spicy kick, add diced jalapeños. For a tropical twist, consider adding diced mango or pineapple.
