Instructions
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash gently with a fork, leaving some chunks.
If using fresh corn, slice the kernels off the cob. Add the corn to the bowl with the mashed avocado.
Rinse the cherry tomatoes, slice them in half, and add to the mixing bowl.
Finely chop the red onion and add it to the bowl.
Chop the fresh cilantro and add it to the bowl.
Juice the lime and pour the juice over the mixture in the bowl.
Season with a pinch of salt and gently fold all ingredients together.
Taste and adjust seasoning as needed. Allow the salsa to sit for at least 15 minutes before serving.
Serve with tortilla chips or as a topping for grilled dishes.
Notes
For a spicy kick, add diced jalapeños. For a tropical twist, consider adding diced mango or pineapple.
