Ingredients

  • 2 each Cornish Game Hens Weighing between 1 to 1.5 pounds each.
  • 3 tablespoons Olive Oil Extra virgin preferred.
  • 5 cloves Garlic Minced or smashed.
  • 3 tablespoons Fresh Herbs A blend of rosemary, thyme, and parsley.
  • 1 each Lemon Zested and juiced.
  • 2 teaspoons Salt Kosher salt preferred.
  • 0.5 teaspoon Black Pepper Freshly ground.

Optional Vegetables

  • 2 cups Root Vegetables Carrots, potatoes, and onions can be used.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Prepare the Cornish game hens by rinsing them under cold water and patting them dry with paper towels.
  • In a small bowl, combine the olive oil, minced garlic, chopped fresh herbs, lemon zest, salt, and pepper.
  • Rub the herb mixture generously all over the hens, including the inside cavity.
  • Stuff the cavity of each hen with lemon halves.
  • If using, place your chopped root vegetables in the bottom of a roasting pan and toss with olive oil, salt, and pepper.
  • Position the prepared game hens on top of the vegetables in the roasting pan, breast side up.
  • Roast the hens in the preheated oven for approximately 50-60 minutes, or until the internal temperature reaches 165°F (75°C).
  • During the last 15 minutes of roasting, baste the hens with the pan drippings.
  • Once done, remove the roasting pan from the oven and let the hens rest for about 10 minutes.
  • Carve the hens and serve them on a platter, garnished with additional fresh herbs.

Consider marinating the hens overnight for deeper flavor. Pair with sides like mashed potatoes or roasted vegetables.
