Instructions
Preheat your oven to 425°F (220°C).
Prepare the Cornish game hens by rinsing them under cold water and patting them dry with paper towels.
In a small bowl, combine the olive oil, minced garlic, chopped fresh herbs, lemon zest, salt, and pepper.
Rub the herb mixture generously all over the hens, including the inside cavity.
Stuff the cavity of each hen with lemon halves.
If using, place your chopped root vegetables in the bottom of a roasting pan and toss with olive oil, salt, and pepper.
Position the prepared game hens on top of the vegetables in the roasting pan, breast side up.
Roast the hens in the preheated oven for approximately 50-60 minutes, or until the internal temperature reaches 165°F (75°C).
During the last 15 minutes of roasting, baste the hens with the pan drippings.
Once done, remove the roasting pan from the oven and let the hens rest for about 10 minutes.
Carve the hens and serve them on a platter, garnished with additional fresh herbs.
Notes
Consider marinating the hens overnight for deeper flavor. Pair with sides like mashed potatoes or roasted vegetables.
