Instructions
In a large mixing bowl, combine the arepa flour and salt. Gradually add the warm water, mixing until a dough forms.
Let the dough rest for about 5-10 minutes to absorb the water.
Divide the dough into equal portions, roll into balls, and flatten to form patties.
Place cheese in the center of each patty, fold the edges over, and reshape.
Heat a skillet over medium heat, add oil, and cook the arepas for 5-7 minutes on each side until golden-brown.
Remove from skillet, let cool slightly, and slice open to reveal the cheese.
Serve warm with your favorite toppings.
