Instructions
Preheat your oven to 350°F (175°C).
Grease a standard muffin tin or line it with muffin liners.
In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
In a separate bowl, mash the ripe bananas until smooth. Add the milk, honey or maple syrup, eggs, and vanilla extract. Whisk until fully incorporated.
Pour the wet mixture into the bowl of dry ingredients and stir gently until well combined.
Fold in your chosen mix-ins.
Evenly distribute the oatmeal mixture into each muffin cup, filling them about three-quarters full.
Bake for 20-25 minutes, or until the tops are golden brown and a toothpick comes out clean.
Let the oatmeal cups cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
