  • 1 tablespoon Chili Powder Adjust based on your preference for heat.
  • 1 teaspoon Cumin Adds an earthy flavor.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for another minute until fragrant.
  • Increase the heat to medium-high and add the ground beef. Cook until browned, about 6-8 minutes. Drain excess fat if necessary.
  • Sprinkle in the chili powder, cumin, salt, and pepper. Stir well and let cook for an additional 2-3 minutes.
  • Pour in the enchilada sauce and stir to combine. Simmer for a few minutes until heated through.
  • In a 9x13-inch baking dish, layer tortillas, beef mixture, and cheese. Repeat until all ingredients are used, finishing with tortillas topped with cheese.
  • Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let cool for a few minutes, garnish with cilantro if desired, and serve hot.

Notes

This casserole can be made ahead of time and stored in the refrigerator or freezer.
