Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine flour, baking powder, baking soda, salt, and sugar (if using). Whisk together.
Add cold, cubed butter to the flour mixture. Use a pastry cutter to work the butter into the flour until it resembles coarse crumbs.
Make a well in the center and pour in the cold buttermilk. Stir gently until the dough comes together.
Turn the dough onto a floured surface and knead gently a few times until it holds together.
Pat the dough into a rectangle about 1-inch thick and cut out biscuits using a floured cutter.
Place biscuits on a parchment-lined baking sheet, brush tops with buttermilk or melted butter.
Bake for 12-15 minutes until golden brown.
Remove from oven and cool slightly before serving.
