  • 1/2 teaspoon salt Essential for seasoning the rice.
  • 1 cup imitation crab meat Provides a sweet flavor that complements the other ingredients.
  • 1 medium avocado Choose a ripe avocado for creaminess.
  • 1 medium cucumber Thinly sliced for crunch.
  • 2 tablespoons mayonnaise Traditional Japanese mayonnaise adds creaminess.
  • 2 teaspoons soy sauce Adds umami flavor; use low-sodium if preferred.
  • 1 tablespoon sesame seeds Toasted for nutty flavor.
  • 2 pieces green onions Chopped finely for flavor and color.

Instructions
 

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to low and cover. Simmer for 18-20 minutes until water is absorbed. Let sit covered for 10 minutes.
  • Prepare the sushi vinegar mixture by combining rice vinegar, sugar, and salt in a small bowl. Stir until sugar dissolves. Fold this mixture into the rice gently.
  • Slice the avocado and cucumber thinly.
  • Mix imitation crab meat with mayonnaise in a small bowl.
  • Assemble the bowls starting with sushi rice, then add the crab mixture, avocado slices, and cucumber.
  • Drizzle with soy sauce, sprinkle sesame seeds, and add chopped green onions and nori strips.
  • Serve immediately and enjoy!
