  • 4 pieces Boneless Skinless Chicken Breasts Approximately 6 ounces each.
  • 1 each Red Bell Pepper Sliced into strips.
  • 1 each Green Bell Pepper Sliced into strips.
  • 1 each Yellow Bell Pepper Sliced into strips.
  • 1 medium Onion Sliced.
  • 2 tablespoons Fajita Seasoning Homemade or store-bought.
  • 2 cups Shredded Cheese Cheddar or Monterey Jack.
  • 2 tablespoons Olive Oil For sautéing.
  • 3 cloves Garlic Minced.

  • 1 each Lime Juice for drizzling.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Season chicken breasts with salt, pepper, and fajita seasoning.
  • In a skillet, heat olive oil and sear chicken for 3-4 minutes on each side until golden brown.
  • Remove chicken and sauté onions and bell peppers for 5-7 minutes until soft.
  • Return chicken to skillet, pour remaining juices back, and sprinkle cheese on top.
  • Bake in the oven for 20-25 minutes until chicken reaches 165°F (75°C).
  • Let rest for a few minutes, then drizzle with lime juice before serving.

Notes

For variations, consider adding jalapeños for spice or using different cheeses.
