Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook 1 cup of long-grain rice according to package instructions.
  • Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Add 1 medium diced onion and sauté until translucent.
  • Add 2 cloves of minced garlic and sauté for an additional minute.
  • Add 3 cups of broccoli florets and sauté until bright green and tender, about 5-7 minutes.
  • Combine the broccoli mixture with the cooked rice in a large mixing bowl. Stir in 1 cup of whole milk and 2 cups of shredded cheddar cheese.
  • Season with salt and black pepper to taste.
  • Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle with 1/2 cup of seasoned breadcrumbs if desired.
  • Bake for 25-30 minutes until the cheese is bubbly and the top is golden brown.
  • Let cool for 5-10 minutes before serving.

Notes

For variations, consider adding cooked chicken, different cheeses, or additional vegetables.
