Instructions
1. Activate the yeast by combining warm water and active dry yeast in a medium bowl. Let it sit for 5-10 minutes until frothy.
2. In a large mixing bowl, combine all-purpose flour and salt. Mix well.
3. Add the yeast mixture and olive oil to the flour mixture. Mix until a shaggy dough forms.
4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
5. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1-2 hours until doubled in size.
6. Punch down the dough, transfer it to a greased baking sheet, and shape it as desired.
7. Cover and let it rise for another 30-45 minutes.
8. Preheat the oven to 425°F (220°C).
9. Dimple the surface of the dough with your fingers, then brush with a mixture of minced garlic and olive oil.
10. Sprinkle shredded cheese and fresh herbs on top.
11. Bake for 20-25 minutes until golden brown and cheese is bubbly.
12. Let cool slightly on a wire rack, then slice and serve warm.
