Preheat your oven to 400°F (200°C).
Prepare your baking sheet by lining it with parchment paper or lightly greasing it.
In a shallow bowl, beat the two large eggs until well mixed.
In another bowl, combine Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper. Mix thoroughly.
Dip each chicken breast into the egg wash, allowing excess to drip off.
Transfer the egg-coated chicken to the breadcrumb mixture, pressing gently to adhere.
Place the coated chicken breasts on the prepared baking sheet.
Drizzle olive oil over the chicken breasts.
Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Let the chicken rest for about 5 minutes before serving.
Slice and serve hot, garnished with additional Parmesan cheese or fresh herbs if desired.
