Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, about 5-7 minutes.
  • Add diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  • Incorporate diced bell pepper and cook for another 3-4 minutes.
  • Add rice and stir to coat. Toast for 1-2 minutes.
  • Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes.
  • Remove lid, stir in shredded cheese until melted and creamy. Adjust seasoning with salt and pepper.
