Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
Drain excess fat, add taco seasoning and a splash of water, and cook for an additional 2-3 minutes.
Add black beans and corn, mixing well and heating through for 3-4 minutes.
In a baking dish, layer half of the tortilla chips, then half of the meat mixture, and half of the cheese.
Repeat layering with remaining chips, meat mixture, and cheese.
Bake for 20-25 minutes until cheese is bubbly and slightly browned.
Garnish with sliced bell peppers and green onions before serving.
Serve warm with a dollop of sour cream.
