  • 1 pound Ground Beef Use lean ground beef to prevent greasiness.
  • 1 packet Taco Seasoning For authentic taco flavor.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Adds sweetness and color.
  • 2 cups Tortilla Chips Use sturdy chips for topping.
  • 2 cups Shredded Cheese A blend of cheddar and Monterey Jack works best.
  • 1 cup Bell Peppers Diced, any color.
  • 1/2 cup Green Onions Sliced for garnish.
  • 1 tablespoon Olive Oil For sautéing the beef and vegetables.
  • Sour Cream For serving.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  • Drain excess fat, add taco seasoning and a splash of water, and cook for an additional 2-3 minutes.
  • Add black beans and corn, mixing well and heating through for 3-4 minutes.
  • In a baking dish, layer half of the tortilla chips, then half of the meat mixture, and half of the cheese.
  • Repeat layering with remaining chips, meat mixture, and cheese.
  • Bake for 20-25 minutes until cheese is bubbly and slightly browned.
  • Garnish with sliced bell peppers and green onions before serving.
  • Serve warm with a dollop of sour cream.
