Instructions
Preheat your oven to 350°F (175°C).
In a skillet, heat a small amount of oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic and sauté for an additional minute, until fragrant. Remove from heat and let cool slightly.
In a large mixing bowl, combine the ground chicken, sautéed onion and garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, salt, pepper, parsley, thyme, and mustard. Mix until just combined.
Transfer the mixture into a loaf pan or shape it into a loaf on a lined baking sheet.
In a separate small bowl, mix together the extra ketchup and brown sugar. Spread the glaze evenly over the top of the meatloaf.
Bake the meatloaf in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
Slice and serve warm.
