Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, Italian seasoning, salt, and pepper. Mix gently until just combined.
3. Portion out the mixture and roll into balls about 1 to 1.5 inches in diameter. Place on a baking sheet lined with parchment paper.
4. Bake for 20-25 minutes until fully cooked (internal temperature of 165°F or 75°C).
5. While baking, heat marinara sauce in a saucepan over medium heat.
6. In a baking dish, pour a layer of marinara sauce, place meatballs on top, and pour more sauce over them. Sprinkle mozzarella cheese on top.
7. Return to the oven and bake for an additional 10-15 minutes until cheese is bubbly and golden.
8. Garnish with fresh basil leaves before serving.
Notes
These meatballs can be made ahead of time and frozen for later use. Serve with spaghetti, in a sub, or as an appetizer.
