Instructions
 

  • 1. In a large mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, cayenne pepper (if using), lemon juice, and white vinegar. Whisk together until well combined.
  • 2. Add the chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.
  • 3. Preheat your grill or oven to medium-high heat (grill) or 425°F (220°C) (oven).
  • 4. Grill the marinated chicken for about 6-7 minutes per side, or roast in the oven for approximately 25-30 minutes until cooked through.
  • 5. Let the chicken rest for 5-10 minutes before slicing into thin strips.
  • 6. Assemble your shawarma by wrapping the sliced chicken in pita with fresh vegetables and sauce.
