Instructions
 

  • Begin by preparing the marinade. In a large mixing bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Whisk the ingredients together until well blended.
  • Add the cubed chicken breast to the marinade. Make sure each piece is thoroughly coated. Cover the bowl with plastic wrap or transfer the chicken to a resealable plastic bag, and refrigerate for at least 1 hour (up to 4 hours for best results).
  • While the chicken is marinating, prepare your grill. Preheat it to medium-high heat. If using wooden skewers, ensure they have soaked for at least 30 minutes.
  • Once the chicken has marinated, remove it from the refrigerator. Thread the marinated chicken pieces onto the skewers, leaving space between each piece. Alternate with vegetables if desired.
  • Place the skewers on the grill grates. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).
  • Remove the skewers from the grill and let them rest for a few minutes before serving.
  • Serve warm, garnished with fresh herbs, alongside warm pita bread, tzatziki sauce, and grilled vegetables.

Notes

For added heat, consider marinating with red pepper flakes. You can also use cubed boneless thighs or a vegetarian option like marinated tofu.
