Instructions
Begin by marinating the salmon. In a small bowl, mix together lime juice, chili powder, minced garlic, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over the top. Allow it to marinate for at least 15 minutes.
While the salmon is marinating, prepare the fresh pineapple salsa. In a medium bowl, combine the diced pineapple, chopped cilantro, diced red onion, and a pinch of salt. Mix well, and set aside.
Preheat your grill or stovetop pan over medium-high heat. Add a drizzle of olive oil to the pan.
Once the pan is hot, carefully place the salmon fillets skin-side down. Cook undisturbed for about 4-5 minutes.
Gently flip the salmon fillets over and cook for an additional 3-4 minutes, or until cooked through.
Remove the salmon from the heat and let it rest for a minute.
Serve the salmon on a platter or individual plates and spoon the fresh pineapple salsa over the top.
Pair with your choice of side dishes like quinoa, brown rice, or a fresh salad.
Enjoy your flavorful creation!
Notes
For variations, consider using different proteins, adding heat with jalapeños, or experimenting with other fruits in the salsa.
