Instructions
 

  • Preheat your oven to 350°F (175°C) and line a standard cupcake pan with paper liners.
  • In a large mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  • In a separate bowl, beat the eggs until frothy. Add the whole milk, vegetable oil, and vanilla extract, stirring until combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
  • Carefully stir in the boiling water. If using chocolate chips, fold them in now.
  • Evenly distribute the batter into the prepared cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Frost with your favorite chocolate frosting once cooled.
