Instructions
In a medium-sized mixing bowl, combine lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper. Whisk until well combined.
Place chicken in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring it is evenly coated. Seal or cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
Preheat grill to medium-high heat or oven to 400°F (200°C). Lightly oil grill grates.
Remove chicken from refrigerator and let sit at room temperature for 10 minutes.
