Instructions
 

  • In a medium-sized mixing bowl, combine lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper. Whisk until well combined.
  • Place chicken in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring it is evenly coated. Seal or cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
  • Preheat grill to medium-high heat or oven to 400°F (200°C). Lightly oil grill grates.
  • Remove chicken from refrigerator and let sit at room temperature for 10 minutes.
  • Grill chicken for 6 to 8 minutes per side, or until internal temperature reaches 165°F (75°C). If baking, place on a lined baking sheet and bake for 20 to 25 minutes, flipping halfway through.
  • Remove chicken from heat and let rest for 5 minutes before slicing against the grain.
  • Serve with your choice of sides or toppings.

Notes

For variations, consider adding other citrus juices, smoked paprika, or serving with grilled vegetables.
