Instructions
1. Prepare your ingredients: Dice the chicken, chop the onion, celery, green bell pepper, and mince the garlic.
2. In a large pot, heat olive oil over medium heat. Add the diced chicken and sauté for 5-7 minutes until golden brown.
3. Add the chopped onion, bell pepper, and celery to the pot. Sauté for another 4-5 minutes until softened.
4. Stir in the minced garlic, cumin, and cayenne pepper. Cook for an additional minute.
5. Pour in the chicken broth, scraping the bottom of the pot to deglaze.
6. Add the white beans (with liquid) and stir to combine.
7. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 20-25 minutes.
8. Taste and adjust seasoning with salt and pepper as needed.
9. Let sit for 5 minutes before serving. Garnish with fresh cilantro.
