  • 1 pound Boneless, Skinless Chicken Breasts Diced into bite-sized pieces.
  • 2 tablespoons Olive Oil For sautéing.
  • 1 medium Onion Finely chopped.
  • 4 cloves Garlic Minced.
  • 1 medium Green Bell Pepper Chopped.
  • 2 stalks Celery Chopped.
  • 2 teaspoons Cumin Ground.
  • 0.5 teaspoon Cayenne Pepper Adjust to taste.
  • 4 cups Chicken Broth Low-sodium.
  • 2 cans White Beans 15 ounces each, such as cannellini or great northern.
  • 1 handful Fresh Cilantro Chopped, for garnish.
  • Salt and Pepper To taste.

Instructions
 

  • 1. Prepare your ingredients: Dice the chicken, chop the onion, celery, green bell pepper, and mince the garlic.
  • 2. In a large pot, heat olive oil over medium heat. Add the diced chicken and sauté for 5-7 minutes until golden brown.
  • 3. Add the chopped onion, bell pepper, and celery to the pot. Sauté for another 4-5 minutes until softened.
  • 4. Stir in the minced garlic, cumin, and cayenne pepper. Cook for an additional minute.
  • 5. Pour in the chicken broth, scraping the bottom of the pot to deglaze.
  • 6. Add the white beans (with liquid) and stir to combine.
  • 7. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 20-25 minutes.
  • 8. Taste and adjust seasoning with salt and pepper as needed.
  • 9. Let sit for 5 minutes before serving. Garnish with fresh cilantro.

Notes

For variations, consider adding zucchini, corn, or using plant-based chicken alternatives for a vegetarian option.
