Instructions
 

  • Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan.
  • In a large mixing bowl, combine the dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt. Whisk until well blended.
  • In a separate bowl, beat the eggs lightly, then add applesauce and vegetable oil. Mix until smooth.
  • Gradually add the wet mixture to the dry ingredients, folding gently until just combined.
  • If desired, fold in the chopped nuts.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  • Serve as is or dust with powdered sugar.
