Instructions
 

  • Heat a large, heavy-bottomed pot over medium heat. Add oil and warm.
  • Add diced onions, bell peppers, and celery. Sauté until soft and translucent, about 5-7 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Sprinkle in Cajun seasoning and add bay leaves. Stir well and let flavors bloom for about 2 minutes.
  • Pour in chicken broth and bring to a gentle simmer.
  • Add diced chicken and cook for about 15-20 minutes until tender.
  • Add sliced okra and let it simmer for another 10 minutes.
  • Add shrimp and cook for 3-5 minutes until pink and opaque.
  • Taste for seasoning and adjust as necessary. Remove bay leaves and garnish with green onions and parsley.
  • Serve hot with rice or bread.
