Instructions
Preheat your oven to 350°F (175°C).
In a medium mixing bowl, combine the rolled oats, all-purpose flour, baking soda, and salt.
In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla flavor to the mixture and beat until fully combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
Drop mounds of cookie dough onto ungreased baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until edges are lightly golden.
Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
For the cream filling, beat the softened unsalted butter until creamy, then gradually add powdered sugar until smooth.
Add milk to the mixture until it reaches a spreadable consistency.
Spread cream filling on the flat side of one cookie and top with another cookie to create a sandwich.
Allow the assembled pies to set for about 30 minutes at room temperature.
