Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium mixing bowl, combine the rolled oats, all-purpose flour, baking soda, and salt.
  • In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla flavor to the mixture and beat until fully combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  • Drop mounds of cookie dough onto ungreased baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
  • For the cream filling, beat the softened unsalted butter until creamy, then gradually add powdered sugar until smooth.
  • Add milk to the mixture until it reaches a spreadable consistency.
  • Spread cream filling on the flat side of one cookie and top with another cookie to create a sandwich.
  • Allow the assembled pies to set for about 30 minutes at room temperature.
