  • Begin by preparing your ingredients. Thinly slice the beef against the grain, ensuring uniform pieces for even cooking. Set aside.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and sauté for about 5-7 minutes until golden and soft.
  • If using bell peppers, add them to the skillet once the onions are caramelized. Sauté for an additional 3-4 minutes until they soften slightly.
  • In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Add the thinly sliced beef, season with salt and pepper, and cook for about 3-5 minutes until browned.
  • Return the onion and bell pepper mixture to the skillet and stir everything together. Cook for an additional 1-2 minutes.
  • Add the cheese. Cover the skillet with a lid for 1-2 minutes to allow the cheese to melt.
  • Prepare the hoagie rolls by slicing them open but leaving one side intact.
  • Scoop the beef and vegetable mixture into each hoagie roll. Optionally, toast the filled sandwiches in a dry skillet for 1-2 minutes on each side.
  • Serve immediately while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave.
