  • 1 pound Ground Beef 80/20 ground beef for ideal flavor and moisture.
  • 1 medium Onion Finely chopped.
  • 1 medium Green Bell Pepper Finely diced.
  • 3/4 cup Sloppy Joe Sauce Store-bought or homemade.
  • 10 ounces Tortilla Chips Sturdy, thick chips.
  • 2 cups Shredded Cheese Blend of cheddar and Monterey Jack.
  • 1/4 cup Green Onions Chopped, for garnish.
  • 1/4 cup Jalapeños Sliced, fresh or pickled.
  • 1 cup Sour Cream For serving.

Instructions
 

  • Heat a large skillet over medium heat and add the ground beef. Break apart as it cooks for 5-7 minutes until browned.
  • Drain excess fat from the skillet and return it to heat.
  • Add chopped onion and green bell pepper to the skillet. Sauté for 3-4 minutes until soft.
  • Stir in the Sloppy Joe sauce and let it simmer on low heat for 5-10 minutes.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Spread tortilla chips on the baking sheet in a single layer.
  • Spoon the Sloppy Joe mixture over the chips evenly.
  • Sprinkle shredded cheese over the top.
  • Bake for 10-15 minutes until cheese is melted and bubbly.
  • Remove from oven, garnish with green onions and jalapeños, and serve hot with sour cream.

Notes

Customize toppings as desired, such as adding jalapeños or avocado.
