  • 1 tablespoon Olive Oil Used for sautéing the vegetables.
  • 1-2 leaves Bay Leaves Optional but recommended for flavor.

Instructions
 

  • Begin by heating a large pot over medium heat. Add a tablespoon of olive oil to the pot and let it warm up for about a minute.
  • Add the diced onion, carrots, and celery to the pot. Sauté these vegetables for about 5-7 minutes until the onion is translucent.
  • Add the minced garlic and stir for about 30 seconds to release the aroma.
  • Introduce the chicken breasts into the pot and pour in 6 cups of chicken broth until the chicken is submerged.
  • Add 1-2 bay leaves and season with salt and pepper. Bring to a boil, then reduce heat and cover to simmer for about 20 minutes.
  • Remove the chicken breasts, shred them, and return to the pot along with the egg noodles. Stir well and simmer for an additional 10 minutes.
  • Check the noodles for doneness and adjust seasoning if needed. Remove bay leaves before serving.
  • Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot.
