Instructions
Begin by heating a large pot over medium heat. Add a tablespoon of olive oil to the pot and let it warm up for about a minute.
Add the diced onion, carrots, and celery to the pot. Sauté these vegetables for about 5-7 minutes until the onion is translucent.
Add the minced garlic and stir for about 30 seconds to release the aroma.
Introduce the chicken breasts into the pot and pour in 6 cups of chicken broth until the chicken is submerged.
Add 1-2 bay leaves and season with salt and pepper. Bring to a boil, then reduce heat and cover to simmer for about 20 minutes.
Remove the chicken breasts, shred them, and return to the pot along with the egg noodles. Stir well and simmer for an additional 10 minutes.
Check the noodles for doneness and adjust seasoning if needed. Remove bay leaves before serving.
Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot.
